Do you remember the days when the lunch bell rang, signaling the excitement of discovering the treasures hidden in your lunch box? Join me as I take a trip down memory lane, revisiting some items—some I’d rather forget—and the iconic snacks and treats that fueled my childhood adventures and satisfied my youthful cravings.
Growing up as an extremely picky eater, I preferred packed lunches because I liked eating the same foods daily. My favorites were wheat bread turkey sandwiches with American cheese, Oreos, hot fries, and peaches. Packing lunch was likely cheaper, too, and I pack my kids’ lunches now because they wouldn’t eat the school lunches.
If I could create one school lunch item from scratch, it would be the fried spicy chicken sandwich I sometimes bought in high school—I’d make an amazing version on a pretzel bun. The ultimate school lunch menu should include quality pizza, vegan and vegetarian options, soup choices, and more diverse food and salad options.
I try to make lunchbox meals look appetizing with foods my kids like. To ensure a well-balanced and nutritious meal, I ensure there’s a healthy carb, protein, fruit, and something hydrating.
I’d love to see salmon croquettes or shrimp and grits in a meal box.
